Easy Awesome Protein Bars

 These are Chocolate Chip Banana Bars! 

Make a fresh batch of these chewy, yummy protein bars and you won't want to buy them from the store ever again! Not only are they super easy and quick to make, but they are so much better for you than the store-bought ones AND less expensive! Let me know how you like them in the comments below!

The two KEY ingredients are:

1) Protein powder - You can use any kind you like, but there will be differences in taste and consistency. My two favorites are ABOUT TIME and PHORMULA-1 - both have several different flavor choices.

2) VitaFiber Syrup (IMO - Isomaltoogolasaccharide) (I spelled that without looking! LOL) Sounds scary, but it's a clear, lightly sweet syrup used to bind the bars that contains no sugar - and it's made from tapioca starch. This bottle makes 84 cubes (size explained below).

TIPS:

  • Combine all dry ingredients (except chocolate chips - add those later - or they'll melt. Unless you want melty chocolate streaks in your bars!)
  • Heat the VitaFiber in a pan until bubbly. Then add in other liquid ingredients (extracts, flavors)
  • Mix the heated liquid into the dry - it will be hard to stir. Let it cool a bit, wet your hands with water, pick it up and knead it. If it's too dry, add a little water and continue to knead until you have a nice, sticky lump.
  • Each batch fills the 6 bars in this silicone mold:

  • Just scoop a large spoonful, add whatever dry ingredients you'd like (coconut, chocolate chips, nuts, etc.), roll into a ball, and press into the mold.
  • I cut each of these squares into fourths. The nutrition info provided is for this size small cube. 
  • I put 2 cubes in each of these awesome little packages and store in the refrigerator.
